Ingredients
Beef tripe
Beef shanks
Beef tongue (or beef liver if you don't mind the taste)

Chicken broth or water, as needed to render fat and soften bones. You want it to be almost like a soup when you’re done cooking it; otherwise, your meatballs won’t hold together properly. If you're using broth instead of water, add salt, oregano and bay leaves—just enough so that they don't taste bland or bitter! Also consider adding some tomato paste for extra flavor!
Directions
In a large pot, mix together all of the ingredients.
Add about 2 quarts of water to the slow cooker and stir well.
Place your mixture in your slow cooker and turn on low for 8-10 hours or until thickened. Add more water if needed as this will depend on how much fat you've added (the more fat, the less liquid required).
Turn off your slow cooker and allow it to cool for about 20 minutes before serving with tortillas or chips!
Serving Suggestions
Menudo is traditionally served with rice and beans, but you can add avocado and tortillas if you'd like. You might also want to serve a side of lime juice or cilantro as well. If your guests prefer it, they may enjoy some beans on the side or a little extra cabbage in their bowls of menudo.
